It’s no Joke! Today is National Burrito Day and there is still time to make them for dinner tonight!!!

Has your stomach been grumbling for dinner yet? If

Has your stomach been grumbling for dinner yet? If so, relief is on the way!

It’s often the smell of food that makes us hungry.

Sure, pictures can help, too. But how about the name? Can a dish’s name make you hungry?

Let’s try!

Northern Chili Burrito. Those three words will tempt and tickle your taste buds.

Here’s what you need to create this northern masterpiece.

Ingredients/Amount:
- Northern Chili bean mix, cooked 2 cups
- 3lbs butternut squash 1 ea
- Vegetable oil 1 tbsp
- Salt 1/2 tsp
- Maple syrup 1 tbsp
- Corn, frozen, thawed (or fresh if available) 1 cup
- Cilantro, chopped 1/2 cup
- Sriracha2 tsp
- Lime, juice of 1 ea
- Monterey Jack cheese (or cheddar), grated 3 1/2 cups
- Whole wheat tortillas 6 ea
- Your favourite salsa 1 cup

And, here are the steps to bring it all together:
1. Cook chili mix following the instructions on the packaging. Drain well once finished cooking.
2. Peel, seed, dice squash. toss with oil, salt, and maple syrup. roast at 375F until tender.
3. Place squash into a mixing bowl and cool.
4. Add corn, bean mix, cilantro, sriracha, and lime juice to the squash and mix.
5. Taste and adjust seasoning.
6. Lay your tortillas on the counter and spread your desired amount filling across the middle.
7. Top each burrito with 1/3c cheese and roll your tortilla while tucking in the sides.
8. Place seam side down on a lightly greased baking sheet and top with salsa and remaining cheddar.
9. Cover with foil and bake at 350F until heated through.

For extra points, you can turn your Northern Chili Burrito into a Northern Chili Enchilada - just add your favourite cheese and bake it!

The idea of The Stak Co. started just over five years ago.

And, just this week, we were featured in Sobey's flyer, which was such an exciting moment, both personally and professionally.

Since the start, I've dreamed of our Staks being sold in retailers across Canada.

So, being featured in Sobey's flyer was encouraging to see that things are coming together and we're on the right path.

When viewing the flyer, I was also struck by the women featured in the section celebrating International Women's Day.

Seeing the other women being featured, I realized how much I personally have received and shared with other entrepreneurs, many of which are women.

Without getting too detailed, launching and growing a business is rewarding but also comes with a lot of challenges.

Personally, I would like to thank everyone that has supported me on my journey, and I encourage you to support these other local companies being led by women entrepreneurs.

Happy National Chili Day!

It is fitting that we celebrate National Chili Day every year on the fourth Thursday of February since there’s nothing better than enjoying fiery fare during one of winter’s coldest months.

Here's little trivia from our friends at NationalChiliDay.com to go with your chili:
- A green chili pod has as much vitamin C as six oranges
- Some cultures put chili powder in their shoes to keep their feet warm
- The first chili cook-off took place in 1967 in Terlinga, Texas, a border town about 400 miles west of chili’s alleged birthplace, San Antonio. It ended in a tie between a native Texan and a New Yorker, but chili cook-offs are still held there today
- Hot chili peppers burn calories by triggering a thermodynamic burn in the body, which speeds up the metabolism
- Chili pepper color is a function of ripeness. Green peppers are usually not fully ripe and the same pepper could be green, yellow, orange, or red depending on its level of ripeness
- The first documented recipe for chili con carne is dated September 2, 1519, according to Wikipedia
